Southwest Omelet

Ingredients

tomatoes, chopped

red bell pepper, chopped

onion, chopped

tablespoon |
black bean and corn salsa
|
|
1/4 |
cup |
Mexican Blend shredded cheese
|
|

tablespoon |
sour cream
|
|
Directions:
Spray a skillet with nonstick spray.
Beat the eggs. Add tomatoes, red pepper and onion. Pour into the skillet and lightly cook.
While cooking the other side, spread salsa over the omelet; then add most of the cheese.
Fold over and place the remaining cheese on top. Serve with a dollop of sour cream for added flavor.
